Roast lunch with pretty much everything!
Fairly easy to make a healthy low-fat roast, I tend to follow the slimming world roast. It is pretty much missing skin and using fry-light for the roast potatoes and lots of veg. They also make their roast gravy using a stock cube and Smash to thicken it up. It actually is pretty good!
